Ingredients:
1 whole chicken
salt
3-4 garlic cloves*
thyme*
*these are my condiments of choice, you may use any other condiments to your preference
You will also need an empty glass jar(jam jar will do it)
Method:
Wash and dry chicken, make the desired cuts on the meatier sides of its body.Rub the whole chicken generously with salt and leave to marinate overnight.Next day wash the chicken, then leave it in a bowl of water to soak out the salt for about 30 min. Rub the chopped garlic and thyme all over and marinate until it needs to be grilled.Do not season with salt!
About 1 1/2 hour before serving, turn on the oven(180-200 C), fill the jar with water and place it in the baking tray.Prop the chicken on the jar in such way that the jar enters its stomach cavity.Wrap the wings with foil to avoid burning.Pour water on the baking tray as well.Bake for about an hour(depending on size it may take a little bit longer), making sure the water in the tray doesn't dry out.To check if chicken is ready, poke with a toothpick and make sure the liquid that oozes out is clear and the tooth pick slides easily in and out of the meat. When ready, turn oven off, leave the chicken to rest for about 15-20 min. then serve.
