Breakfast pizza/calzone

For two large pizzas:
 3 x bread  dough
6 large eggs or 8 small eggs
3 tomatoes
other veggies-optional
oregano/Italian seasoning
olives
green onion
mozzarella cheese(optional)


Follow the instructions for making the dough in the wholewheat bread recipe.Once the dough is ready, leave it to rest for 20 min. 


Divide the dough in two(or three), roll one part out and place in greased baking tray, making sure that the edges are rolled back to give them a little bit of height (so the egg won't spill out).

Cover the surface with tomato(and other veggie) slices and sprinkle generously with oregano/Italian seasoning. Place in preheated oven and bake until the edges start to change colour.

Crack the eggs, whisk and add green onions, olives, grated cheese and seasoning. Pour half of this mixture on top of the dough and bake it for 10 more minutes. Repeat with other half of dough.


For breakfast calzone, roll out smaller amounts of dough and pack one side of it with slices onions,tomatoes,  

precooked omelette, cheese, olives and seasoning.Close the calzone and seal by pressing the edges together.

Brush with beaten egg yolk and bake until golden brown.
